Loved reading this story! I have always wondered why soy sauce is such limited category even in the best of Asian markets. I branched out to Momofuku but I am looking for more variety - just as I would with chili crisp, vinegars and oils. cannot wait to try!

Thanks for sharing your story - and congrats on such an impressive product (can’t wait to try it!). It’s funny, when I was running my bean company, all I wanted was more space to write. I suppose the creative pull just flips depending on where you’re standing.

I am just so inspired by everything you're up to, Clarissa! And the final product? AMAZING. I have been loving cooking with the classic soy sauce, and I've been using the silky soy sauce as a finishing drizzle (and in salad dressings!). Go go go!!!

This is so cool to read about - and makes total sense! I’ve had the same thoughts about feeling like I need to write recipes with inexpensive, widely accessible pantry products, but also wanting to celebrate the thoughtfully made (and more delicious) options I’m finding also. It’s a tough balance but it sounds like you’re on the right track with a really good product at more of a middle market price range. Need to get my hands on some of this to try!
